Pickled Onions
Small onions
Spring water
Pinch of Nutmeg
Pinch of Mace
Pinch of Whole Cloves
Vinegar
Salt
1. Put the small onions in a pot.
2. Cover them with spring water and a handful of salt.
3. Boil them.
4. Strain off the water
5. Take off three layers from the onions.
6. Dry the onions well. (cont.)
7. Put them in a jar with nutmeg, mace and cloves.
8. Boil enough vinegar with a pinch of salt to fill the jar.
9. When vinegar mixture has cooled, pour it over the onions.
10. Put the lid on the jar.
11. Let sit for at least 24 hours. The longer they sit, the more flavor.
Shrub
Shrub was a beverage popularly prepared with the juice of an acid fruit, like lemon or orange, and a spirit, such as brandy and/or wine. The word "shrub" is a variant of an Arab word, shurb, meaning "sweet drink". It was one of the many culinary ideas brought back into Europe with the returning armies of the 11th and 12th centuries.

Combine: brandy, lemon juice, lemon peel and nutmeg in a large bottle; cork well
Set aside: for 3 days for flavours to blend
Add: wine, sugar
Mix: thoroughly to dissolve sugar
Strain: twice through a filter, such as a paper coffee filter, several layers of fine cheesecloth or a wine filter
Store: in smaller bottles
Yield: 72 servings of 60 mL (1/4 cup) each
Carne Seca
Use roast beef or brisquet. Cook in crock pot on low till most moisture is gone, aprrox. 12 to 18 hours. Meat should be crispy. Shred meat into shreds. Simmer in following for one hour.
